SHRIMP FETTUCCINE ALFREDO
Original recipe makes 6 servings
1 pound of fettuccini pasta
1 tablespoon of butter
1 pound of cooked shrimp
4 cloves of garlic
1 cup of half-and-half
6 tablespoons grated Parmesan cheese
1 tablespoon of chopped fresh parsley
salt to taste
DIRECTIONS
1.Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente;
drain.
2.In a large skillet, cook and stir shrimp and garlic in the butter for about one minute. Pour in half and half; stir.
Sprinkle Parmesan cheese in one tablespoon at a time, stirring constantly. After all Parmesan is added, mix in parsley and salt. Stir frequently making sure it does not boil. Sauce will take a while to thicken.
3.When sauce has thickened, combine with cooked pasta noodles; serve hot.
My first time eating shrimp alfredo was in the summer of 2011. I had just entered college for the first time in my life and I was out with friends eating at an Italian restaurant. Everyone who knew me knew that I loved myself some hamburgers. I was the type of person that would always try any type of burger on the menu. It was so serious that my friends dared me to try something new. I do not turn down too many dares so ofcourse I did it. I was not a big seafood fan but I did like pasta. So on that day I tried my first dish of shrimp alfredo and I loved it! I loved the way the warm fettuccine cheese would melt onto my tongue as I bite down into the scrumptious, mouth watering, bite size shrimp. I was really having a great time eating!
When I researched the history of this pasta I discovered that in Italy its not even called "fettuccine alfredo". It is known as pasta with butter and cheese. The pasta was promoted by US voyagers in Rome by restaurateur Alfredo di Lelio.
He prepared it with his name added: Fettuccine al burro. Word is that he became nationally and internationally known for this famous dish when two famous honeymooners came to his restaurant and fell in love with his dish. They were so amazed by it that they shared it with their friends back home in Hollywood and soon everyone was speaking great news about this dish. The dish became so famous that even when Lelio sold his restaurant in May of 1943, the new owner kept all his traditional recipes. He even let the restaurant's name remain the same. WHAT A DISH!
